I just re-subbed after being gone since before Cataclysm. What MoP content do I HAVE to do before it's completely irrelevant?

I'd go and do the patch 5.1 quest chain and take a few swings at Garrosh. Experience the content, take your character through all the raid finder versions of things at least once. Just go along for the ride and don't get upset if you don't survive or don't do the best.

Enjoy the story. Don't do dailies, don't grind stuff -- just immerse yourself in Mists lore and story. Read the quest texts. Slow down. Make WoW your game again, and then when WoD hits, it'll be like you never left.
